mmmm, Salad

Yum. A Winter Salad


Tuesday was another good day for me. I met my goals of (1) keeping my food journal and (2) avoiding refined sugar and junk food. Just focusing on today helps. I'm tyring not to worry about anything except making good choices in the moment--trying not to worry about how far I have to go or how long it's taking or how I wish I was something other than what I am. Just trying to love and accept myself just as I am and make good choices moment-to-moment.

All the comments about salads the last couple of days got me thinking about making a big salad. Summer salads are easy, but winter salads can be so much more interesting. What are you best winter salad ideas?

Hey kenny, I know you are reading this, and you've got lots bigger things to think about than salad! I know all this seems trivial compared to looking for a job in this economy. I'm thinking of you and sending you my very best wishes. Just remember, it's all going to workout just fine. You have the resources you need for each moment. Read Monday's post again. =o)

Don't know the nutritional value of this one, but it's DELICIOUS. From California Pizza Kitchen. Gonna try to recreate it at home: Shredded Napa cabbage, chilled-grilled chicken breast, julienne cucumbers, edamame, crispy wontons, peanuts, cilantro, julienne carrots, red cabbage and green onions tossed with a lime-cilantro dressing. Topped with crispy rice sticks and Thai peanut dressing. Add fresh avocado.

Pat, Monday hit the spot. The job search has been a very difficult process but we have to keep telling ourselves that difficulties make us better people in the long run. I have no idea what a “Fight Gone Bad” (Mentioned in Shana’s blog) is but I am certain that after having completed one a person is better and stronger than they were before. Therefore, we continue to stay positive and we must always give thanks for being alive and well.

Thank you again for your words of encouragement as you know how I much value your opinion. I truly believe my wealth is in great friends and family. I also love salads.

Kenny, it's good to hear from you. One day when you have time, come down to Decatur and join me in a workout at CFED. Maybe we'll even do "Fight Gone Bad"...but not if we're lucky.

I am not sure it qualifies as a winter salad, but I made a large one for a Super Bowl Party last weekend, and it is delicious:

Chopped Lettuce (I prefer Romaine, but iceberg or green mix works fine)

Black Beans (I like the canned organic vegetarian beans available at the market. You can prepare your own if you are up to the challenge!)

Whole Kernel Corn
Roasted Red Pepper, diced (I even sometimes throw in some roasted brocolli, too!)

Chopped Avocado (Optional fat content. I use lime juice on the avocado to keep it from turning brown in my salad. I do not like brown avocado!)

Tomatoes (I use the grape tomatoes and slice them in half. In the winter, the grape tomatoes seem better to me.)

Salsa Verde (I buy it at the store, but you can make your own using tomatillas and peppers if you are up to it.)

Top it with some low fat or no fat cheese or soy cheese if you want and your favorite dressing. I sometimes mix a dressing using the salsa verde, a small amount of no fat sour cream, no fat mayo, and chopped scallions or onions, blended together. I eat the salad as a meal. Not sure how that plays into everyone's diets, but I do enjoy it! I look forward to hearing more ideas for salads! I LOVE salad! I think I shall go get one now!

Kenny, good luck with the job search. I hope something opens for you soon. An important factor is to not lose sight of what you have to offer as we have talked about many times here.

Oh SHeryl, that salad from California Pizza Kitchen sounds great. They have a salmon salad that is REALLY good too! It has tons of grilled veggies in it.

PatC~ I'm not really a big salad fan, so i don't really have any recipes. When I crave salad, it is usually very basic. I big hunk of iceburg, like a wedge topped with Lite Blue-Cheese dressing. That's it. I also like Cobb Salad's with shrimp, but other than that, I prefer hot food.

Oh, I do have one little fruit salad that I like to make. It is just fresh strawberries, fresh pineapple, half of an avocado diced, and raw pepitas mixed together and drizzled with a little bit of lime juice. It tastes great and is very colorful and has healthy fats. The pepitas have good protein for a little seed.
