Weekend Update

Roasted Asparagus and Peppers


I roasted a big pan of veggies this weekend. So easy and so delicious. I don't know why I haven't been doing this all along. Initially I had the vegetables alongside grilled salmon. Later I used some in an omelet and in a salad at another meal. It is so convenient to have these in the fridge to pull out as needed. After cleaning and prepping the vegetables, I patted them dry with a paper towel, tossed them in a big Ziploc bag with a little olive oil and cracked peppercorns. I like this method because you can swish them all around and get everything coated with the olive oil without using too much oil. I spread them on a baking sheet and roasted at 425 until the peppers started to darken and shrivel up. I think it was maybe 20-25 minutes.

For some healthy fat, I had a little avocado. I like avocado, but I'm not tempted to eat the entire thing; I'm satisfied with a slice or two added to my salad or as a garnish with my meal. I find nuts to be nearly impossible to control right now, so I'm better off choosing avocados, olives, and healthy oils as my source of fats. For now.


A Bowl of Berries

For a sweet treat, I had some fresh berries. I found some terrific strawberries and blueberries at Publix at a good price. I served them in a special bowl that I love which seemed to make them even sweeter. I find that I am more satisfied if I attend to the presentation of the food. Plus it's fun to pull out a pretty dish that I haven't used in a while. And it is just good to focus on the little things that make us happy. A pretty bowl. One of my happy grateful bits from the weekend.

Pat like you I have taken the "nuts out"! They are too tough to control and the program that I am on I am not suppose to have them, I feel lighter all ready! Your meals look delicious, I am so proud of you!

You know I love roasted vegetables! Yum! I never thought of roasting them ahead of time and keeping in the fridge. Another terrific tip from the "Losing It" blog! Thanks!

I agree with you that presentation of the food makes such a difference in how I feel about eating it. Break out the pretty dishes everyday if it makes you happy! I love the bowl with the berries! Here's to a berry, berry good Monday! :-) (Sorry, I couldn't help myself!)

When I have a salad at a resturant or pick one up to-go, I will try to get one with nuts...this puts nuts in my diet in a controlled way. But having them in the house doesn't work for me.

I roasted another pan of veggies last night ... brussel sprouts and broccoli...both inspired by Byron. So now I have restocked my roasted veggie supply. They are better hot off the roasting pan of course, but they work great as leftovers too in salads and omelets.

Thank you Pat I miss you also. I have been busy looking for the company that is going to consider me a handsome (Not physically but an adj. for substantial or considerable) executive. I know there is one out there looking for me.

In the mean time, being at home isn't helping me not eat. The pantry is just too close. I don't snack on candy or sweets but peanut butter, cold cuts, cheese, etc are my downfall. Typical things for the family, therefore, not having them in the house isn't an option. Getting me out of the house would be best.
