Taking a Break

I'm taking a break from the blog. I'll be back in a few days. Hope you will too.

Enjoy your break! Until you are back, I will sit and eat my roasted broccoli with garlic and red pepper. I love broccoli, but tired of the steamed variety. Found this new recipe for oven roasting it, and it is delicious. If anyone wants the recipe, let me know. I think I found a side dish or a snack that I can enjoy with limited guilt.

Please post the recipe Byron! I over-did it on steamed broccoli a few months ago and it used to be my favorite - so would love a new way to prepare it.

Please tell me you are not eating roasted broccoli for breakfast.

Byron, We roast broccoli with garlic and olive oil pretty often. (One hint is to roast until extremely brown but not burned) WOW, I can eat it like french fries. Having not tried one with red peppers, I too would like the recipe.

The picture is just a cute picture I found on the internet. I was googling images related to "hiding", "taking a break", etc. And this one popped up, and I really liked it. I felt like I wanted to crawl under the sofa and hide at the time I think. I really understood this little pup. A reaction I guess to having "put myself out there" for the last few months. But the reason I'm taking a break is 'cause I am spending my evenings trying to figure out the CFED books, how to do payroll, the taxes, etc. So I just need to focus on that for a few days...then I'll be back to posting regularly...probably Monday.

I just emailed Byron to tell him everyone wants the broccoli recipe. He emailed back and said he's in court. =o) he'll post later with the recipe. I really don't understand what his problem is...I mean he should be able to post recipes from court, don't y'all think.

I asked the Judge for a recess and told him I was "Losing It". He told me what I could do with my brocolli, and it was not nice!

:-) At any rate, it sounds as if Kenny found it already. It is addictive like French Fries, which those of you who know me I do LOVE! Hence, my need to locate a guilt-free side that I enjoy. Recipe will follow this post.

yield: Makes 4 to 6 servings

Ingredients
1 1/4 pounds broccoli crowns, cut into florets (about 8 cups)
3 1/2 tablespoons olive oil, divided
2 garlic cloves, minced
Large pinch of dried crushed red pepper

Preparation

Preheat oven to 450°F. Toss broccoli and 3 tablespoons oil in large bowl to coat. Sprinkle with salt and pepper. Transfer to rimmed baking sheet. Roast 15 minutes. Stir remaining 1/2 tablespoon oil, garlic, and red pepper in small bowl. Drizzle garlic mixture over broccoli; toss to coat. Roast until broccoli is beginning to brown, about 8 minutes longer. Season to taste with salt and pepper. Serve immediately.

I find the times are not an exact science as Kenny pointed out. You will have to watch the brocolli to avoid it burning. Also, the recipe calls for a lot of olive oil. I usually put in less, just enough to coat the brocolli and to have available when pouring the garlic and red pepper over it. I like spicy food so I increased the red pepper. It has NO CALORIES!

I hope everyone enjoys it as much as I do. Let me hear your reviews. I think I shall cook more tonight! It is tasty in egg white omelettes the morning after, too, if you can save any of it! So, yes, I eat brocolli for breakfast! :-)

Thanks for the recipe Byron. It sounds great. I made some Roasted Butternut Squash last night. That is tasty too. But, I definitely need more green food in my diet. I just happen to have some fresh broccoli took. Maybe I'll try it tonight.

Hey Pat, want I should guest-host for the blog? HAHA (like on Letterman) ...at least once...

I have been trying to zone hard. My brain feels like it's going to explode with all the calculations haha and Laura even gave me a sample one-day menu. So I'm just eating that same menu for a week lol (I am NOT kidding) The good (& scary, for a whack-job like me) part, is that I am already seeing results... in my workouts, in my disposition, & in my skin. meaning it's getting a little thinner and I can see veins through the adipose tissue heh heh.
But it is complicated as HALE -- I have been doing it all wrong apparently. And my friend got me a digital scale (for us, cuz I'm going to start making zone meals for people) and MAN, am I off on what 1oz or 3oz of protein is. Like the rear-view mirror in a car "objects behind you are larger than they appear", but the opposite.
All I know is I am into immediate gratification and this chipping away, being patient, treating my food like a prescription drug is KILLIN me. That's probably why I can eat a bag of nuts instead of counting out 4 almonds. Who the hell eats 4 almonds??? haha
I am doing it tho.
Even if I'm bitchin.

Hahaha Kath! You're funny! I am trying to stick more with the Paleo side because to me it is less calculations and blocks and all that. It's pretty much, "Eat this...not that." I do try to balance it though. Always having some sort of protein with almost everything that I eat. I am no where near perfect, but it is getting better.

Making ZONE meals for yourself let alone others would drive me insane. I'm a bit OCD!

Anyhoo, glad your hard work is paying off. I think that IS instant gratification since it is the first week and you're already seeing some results!!

I am looking forward to Kath's guest spot. Like Joan Rivers on the Tonight Show (am I the only one old enough to remember her guest hosting?), she can say things the regular host would never utter to the guests! LOL!

I made more brocolli last night. Of course, since I was leaving town, I ate every bite of it. Four or Six servings equated to ONE for me, but at least it was green!

Kath I just looked last week for a zone friendly version of premade "fresh" meals and couldn't find one without a really high shipping fee 'cause they were sending it from across the country. I'm out of town next week but let me know when you're up and running.
